4 tsp. cornstarch
2 tsp. less-sodium soy sauce
1 tsp. toasted sesame oil
4 scallions, finely chopped
1 lb. boneless, skinless chicken breasts, thinly sliced crosswise
1 large clove garlic, minced
2 tsp. grated fresh ginger
1 lb. broccoli, cut into bite-size pieces
1 large red bell pepper, cut into squares
1/4 c. chopped fresh cilantro
2 c. hot cooked brown rice

- Whisk together the broth, cornstarch, and soy sauce in a small bowl. Stir in the scallions and set aside.
- Heat the oil in a wok or large nonstick skillet over medium-high heat. Add the chicken, garlic, and ginger. Cook, stirring constantly, for 3 minutes, or until the chicken is no longer pink. Transfer to a bowl and set aside.
